Learning Curves

There is always a learning curve when you start something new.

You try to map out as much as you can, without being too rigid. We’ve certainly ran across our fair share of challenges getting things going. However, I feel like it’s the fastest way to learn about whatever it is you are trying to get better at. Some weeks, it’s a challenge to come up with a total different menu from the week before. Other weeks, the ideas roll like a steam engine. The great part about this, is that we don’t have to be locked into a specific “box” of the kind of food we serve. We have the capability of preparing dishes that we’ve learned and executed over the years, as well as creating new ideas that are fun and exciting for us to play around with.

Through this, we’ve learned what our customers look forward to each and every week. Having that challenge is a good thing, and one that we accept head on. Actually, we kind of have to, right?

I love getting emails, texts, phone calls from you all letting us know how you’re enjoying our food & even giving some suggestions on what you would like to see. Trust me, this isn’t always the case in restaurants. We can’t be everything to everyone, but we can offer more of a diverse selection than most places out there.

Thanks for your growing support! Have a wonderful week, we can’t wait to cook for you!

Cheers,

Chef Josh
